Earlier this week, even though temps were in the high 90's, I had a hankering for baked haddock.
Hmmm, thinks I, how to do that without heating the house, too.
The gas grill!
Lit both burners, set the controls to high, put down the lid and went in to prepare the fish.
Took my heavy, enameled steel broiler pan and set aside the slotted insert. Lined it thoroughly with heavy aluminum foil. Brushed it down with a bit of melted butter. Rinsed off my fillets (4 at about 10 oz each), patted them dry and placed them skinside down in the pan. Brushed them with little more melted butter. Sprinkled them with grated lemon peel, garlic and onion powder, some fresh cracked black pepper and some sweet paprika. Covered the pan with more foil and placed it into the heated BBQ, closed the lid and set the timer on the microwave for 7 minutes.
Checked the fish, almost perfect, so I cut the gas, closed the lid and went inside to heat some baked beans to go with...
The fish was perfect!
We had it with a fresh squeeze of lemon, the beans and cold American style potato salad...had English style pale ale to drink.
